Gluten Free Cauliflower Pizza = AMAZING!

Ok, so I found this recipe for gluten free pizza on pinterest... it was an epic nail. I loved it, the husband loved it... what more can you ask for! So I made this last night, my first post was going to be my moose roast but then I remembered I took a pic of my pizza last night!

Ok, so the crust is cauliflower!
Cauliflower Pizza Crust - soooooo good! Made this bad boy tonight. 100% Keto!

I kinda modified the recipe a little... I got the crust from a recipe for "garlic bread sticks" the original link is below!

Crust
1/2 head of cauliflower (you will be ricing it)
1 egg
1/4 cup Parmesan cheese
1/4 cup asiago cheese ( like I said, spell check can't help me)
2-3 cloves - roasted garlic (I was lazy and used the ones I had bought already roasted)
pepper

K, so I preheated the over to 400. While that's preheating I riced the cauliflower. Easiest way is I cut up the cauliflower, and put it in my trusty magic bullet with water and blended it. Poured riced cauliflower in a mesh strainer. I then take a spoon and squish down the cauliflower trying to get out as much moisture as possible. Then add it in a bowl with all the other ingredients listed above. Used a 9x13 pan and sprayed it with cooking spray (or drizzle a little oil if you want). Cover it with parchment paper. Then take the "crust mixture" and press it down evenly all over the pan. Trust me, there's enough there for the whole pan... I had to use my fingers to get it done evenly but it works.

So depending on how much moisture you get out of the crust, depends on how long. Apparently last night I was too lazy to get out much of the moisture so I cooked it for 20 minutes on 400 and then 20 minutes on 350. You gotta kinda wait and watch. You want the top to brown, and it not be all mushy.
If you are not ADD like me, then it should only take 20 minutes.

Then take your wonderfully browned crust, add your sauce and toppings.
In the pizza above I did pizza sauce, crumbled bacon, turkey pizza pepperoni, onions, left over crock pot chicken ... topped that meat lover bad boy off with some Havarti cheese and then banana peppers.
Cooked it for another 10 minutes and broiled for 2 to get the cheese nice and gooey! Once out of the oven I cut it in squares and let it cool a little on a wire rack to help with the moisture.

And ta-da! It was awesome, my husband and I ate the whole thing... and didn't feel like crap afterwards like we used to with regular pizza. It falls a part a little if again, you are ADD like me and don't have time for things like making sure you get all the moisture out... but it still fabulous!
