Sweet and Spicey Cheese Stuffed Bacon Wrapped Chicken

Ok... So this is my own recipe... not pinterest. It's easy and I just did it up tonight with what I had on hand. My husband said it was the best chicken I ever made so I thought I would share.




Ingredients
4 chicken breasts (boneless skinless)
Cheddar cheese (4 small pieces)
Garlic and herb cream cheese (about 4 tbsp.)
8 slices of bacon
Sweet and Spicy Thai sauce

Preheat oven to 400
I took each chicken breast and pounded them with a meat mallet in a plastic baggie. I didn't go too crazy, just enough to flatten it a little. Then I put approximately a tbsp of cream cheese in the middle and placed a piece of cheddar cheese on top. I rolled the chicken up and then wrapped a piece of bacon around the edges and secured with a tooth pick. Then I wrapped another piece of bacon around the chicken to cover the top.
Placed all four breasts on a wire rack over a cookie pan covered in tin foil, and cooked the chicken for 38 minutes. 10 minutes in I brushed the chicken and bacon top and sides with a healthy dose of the sweet and spicy Thai sauce.

It came out amazing, served it with some GF buns and green beans. I didn't take pics of me making the chicken... maybe next time. I wasn't going to blog this one but my husband insisted so I just have a pic of the finished product.
